Does it REALLY Cost More to Eat Healthy? #2

Beet and Carrot Casserole
(Sounds like barf, right?)
I bunch beets ($1.84)
1 lb. carrots ($.78)
2 bunches scallions, chopped ($1.78 for one very large bunch)
3 cloves garlic, minced ($.33)
4 -6 Tbs. olive oil, ghee (clarified butter), butter or coconut oil (The olive oil purchased was expensive, but it was a huge jug, for $26.00, estimate of how much I used, $1.00)
 Black Pepper to taste (All ready had it, but for a quality kind it's about $5.00)
1 bag of cheese ($2.48)

Scrub beets and carrots. Steam beets whole. After about 15 minutes, add carrots. Cook until tender yet firm. Remove beet skins. Grate beets and carrots with a coarse grinder. Loosely mix together. Saute scallions and garlic. Toss this mixture together with the beets and carrots,  and black pepper and put in a casserole dish. Cover with grated cheese and bake at 350 degrees just until cheese is golden.


This recipe makes 8 servings.

The PRO'S
The casserole was surprisingly very delicious. I hate beets so I thought it was going to make me puke to eat it. It's also very healthy for your liver.  Where can you go out to eat for only $.88? I am feeling so much better eating healthy meals.  My husband loved it, he ate 2 platefulls. I have a lot of leftovers.

The CON'S
Everything I used to cook with was covered in fuschia pink from the beets, the recipe is very messy. I didn't like having to grate the carrots and beets when they were already cooked, it was very time consuming. It took me about 2 hours to come out with the final product.

Once again, my excuse it's too expensive to eat healthy has failed me. Slowly, I am adapting to the idea of eating more healthy foods. All the recipes I have posted come from the book Food for Health and Healing. Click the picture to purchase.

Does it REALLY Cost More to Eat Healthy?

I have so many excuses to not eat healthy. The top one, it's EXPENSIVE. So I decided I am going to post the cost of a few really healthy meals and compare them to the fast food I am usually consuming. Yes, I know it's bad I eat a lot of fast food but I'm a student and all my time is spent in the business building, not at home being a housewife. Anyway, on to the post.

Ingredients



1/2 cup basmati rice, (I substituted brown rice, the entire package was $1.99)
1/2 cup mung beans (Super cheap, 2.15 per lb. I spent $1.51)
5 cups filtered water or more if you want it soupy (FREE)
1 stalks celery (1.29 for a huge bunch)
1 carrot (1.59 for bag of baby carrots, I like them better)
1/2 bunch kale, broccoli, chard or other greens(optional) (Kale was 2.78 for a gigantic bag, broccoli was .99 per lb)
Spice choices: 1/2 tsp. of each; cinnamon , cumin powder, cumin seeds, coriander , fennel seeds, turmeric, black or chili pepper or chili flakes, basil, oregano  ( I already had all the spices so I didn't count them but this is where it can get costly. Cheaper spices are cinnamon, cumin, oregano, pepper)
1 large onion (.33)
1 inch ginger grated (.86)
1 clove garlic chopped finely .33


Total for all the ingredients including tax..............................................$12.02

The recipe made 8 servings, Cost per serving...................................... $1.50

I think I probably ate 2 servings in 1 setting so my total cost is ..............$3.00



ARBYS 

I love Arbys mmmm.... curly fries. I order the same thing everytime I go there. Arby melt combo with curly fries and have a small shake for dessert. 


               Total for the meal (estimated).....................................................$6.00

Eating healthy was cheaper in this case, plus I have tomorrows lunch, and even possibly dinner. Moral of the story my top excuse was not right. I think I need to start cooking more.

This weeks download is an artist I have not heard before but I think I might be buying this entire album. It's all ready lifting my spirits.

The Cake That Does Not Fail

I love to bake but it is impossible for me to make a cake. I have tried cake mixes, baking from scratch, and I get the same result every time. Even the cakes I made in an Easy Bake Oven turned out horrible.  One time I was going to make an easy and delicious strawberries and cream cake. I bought fresh strawberries and cake flour, that was supposed to make the cake fail proof  and guess how it turned out? Failure. I bake the best cookies but when it comes to cakes I give up. Cakes are not one thing I am going to try, try, again to make. I am over it. 

The problem is, I love desert. If I could live off desert and not be a 750 pound diabetic I would. So I have to find alternatives and I did. 


 Private Selection Upside Down  German Chocolate Cake

When I saw the chocolate fudge cake topped with caramel, coconut, and pecan frosting, at Smiths I had to have it.  
The cake is warmed for about 15 minutes and gives off a chocolate aroma as if it was baked from scratch. 
 Once the cake is heated it is place a plate upside down on the top of the cake and flip it over. Once the parchment paper is removed it appears I slaved away all day in the kitchen to prepare this cake. The cake didn't look too appealing or over the top so it could pass as my own.  (Another plus, you can fake it and tell everybody it was made from scratch, well as long as you throw the box away in the outside trash can.)  
It really is warm and gooey inside, the perfect consistency, and very moist. I ate 2 pieces about that size. I loved the nuts and coconut in the "German" part of the cake. YUM.  I guess you can forget about me worrying about being 750 pounds. HAHA...  After I cut the first piece it disappeared within a couple hours. 
So all of you do yourselves a favor and don't worry about making the cake and have  Private Selection Upside Down  German Chocolate Cake instead.

Vegas Deals are Awesome

After I completed my finals last week I had the privilege to take a weekend trip to Vegas with my hubby and mom. I had fun eating at the Bellagio Buffet, lounging by the pool and shopping. To top it off I found some amazing deals. The weekend was pure bliss. I have not even unpacked my suitcases yet because I am in denial about having to live in reality.

After I purchased my splurge item at Victoria Secret I wanted to see for myself why Sephora was so amazing. On the way my mom found a clearance rack at JCPenney that said $4. I ended buying an entire wardrobe for $24. It was the highlight of the trip. SCORE! Tons of cute new stuff.
